Longganisa and Cucumber Salsa

Surely you couldn't get better than this ?! hahahaha

Longganisa is what we call the native sausage in the Philippines . Nearly every region in the country has their own version ranging from sweet , garlicky , hot and everything in between . The good thing about making it homemade , well , for one thing , you can be sure you're using good cuts of pork , add whatever seasoning you like and 'tis easy to make , too ! Cheap , too ^__^

This is a popular breakfast meal served with sunny-side up egg and rice or fried rice but you can eat it whenever you like with rice or as a stuffing in your sandwich and ice cold Coke hahaha . Back home , maybe they get tired of frying it , they started selling it as a barbequed longganisa , spearing several pieces in a wooden skewer and grilling it over charcoal ! Yummy !

My version is skinless since I can't find sausage casing here .


Skinless longganisa :

750 grams ground pork
2 1/2 T minced garlic
1/2 tsp chili flakes
1/2 tsp black pepper
3 T rice vinegar
2 T brown sugar
1 1/2 tsp salt
1 T chicken powder
2 T achuete oil , recipe stolen here
1 T arrowroot flour
1 1/2 T Spanish paprika

* Combine and mix ingredients together , adjust taste by frying a small portion of the mixture or you can taste it raw . Chill overnight . Get a small portion and form into a small logs , fry and pig out hahaha


Cucumber salsa :

1 small cucumber , diced
2 small shallots , sliced
half of a small chili pepper , diced
juice of 1 lime
2 tsp fish sauce
1 T palm sugar
1 T chopped coriander

* Combine and mix ingredients . Great as an appetizer . Goes well with my sausage lol

  1. This does put my breakfast to shame! I wish I was enjoying a plate of that goodness. However, I know if I had been there we would be fighting over that last bit of sausage as well as the salsa. Perhaps this meal would be better eaten in solitude-no sharing. Delicious breakfast Anne!

  4. What a delicious breakfast! My mom used to be the longanisa supplier of the SSpS nuns in my school. Now I'm asking myself how come I've never made longanisa??!! Thanks for the inspiration, Anne!

    1. Tina , before I'm too lazy to make longganisa but because the price of that here in some Filipino shops don't really justify the size or the taste for that matter , so I decided to make my own hahaha

  10. very cool! i'm so intrigued by filipino food. i've had the mexican version of longganisa (spelled longaniza there!), and it's delicious. i'd love to try it with a filipino spin! yum!
